Chocolate Academy 2011

I just returned from a 2-day workshop at the Callbaut Chocolate Academy in Belgium.
Six pastry chefs and confectioners from different parts of Europe met in a tiny village near Brussles (next to the Callebaut headquarter :) ) to study the newest techniques, trends, and products in the world of chocolate.
